Interesting Facts
"Don Antonio" Nero d'Avola is a red wine produced using Nero d'Avola grapes grown in vineyards with carbonate soils with white clay. Harvesting is done by hand at the end of September. The berries are fermented in stainless steel tanks at a controlled temperature of 26-29°C and macerated on the skins, which lasts about 20 days. Malolactic fermentation takes place in stainless steel vats. The wine is aged for 12 months in 225-liter French oak Allier and Tronca barrels, and then another 12 months in bottles in the winery's cellars.
