Cims de Porrera was founded in 1996 with the aim of exploiting the full potential of the vineyards of the village of Porrera in the Priorat region. Some of the vineyards are over 100 years old and are made up mainly of Carignan, the star grape here, prized by winemakers for its ability to give wine its unique flavour, juicy tannins and delicious aromatics. Carignan, along with the light and fruity Garnacha, are the two main local varieties of Priorat. The soil of the region is “licorella”, free-draining, poor in nutrients, consisting of partially decomposed slate and quartz. The harvest is entirely by hand. Fermentation takes place at a controlled temperature of 28°C for 15 days. The wine is aged in 225-litre French oak barrels, 10% of which are new, for 18 months.
