The best Soave wines are produced in the Classico region - the central, historical production area. Here the vineyards are not just on the hills, but on a dormant volcano. The soils of Soave Classico are solidified volcanic magma. They are poor in organic matter, but full of minerals. This allows winemakers to produce vibrant, authentic wines. The grapes are harvested entirely by hand. Fermentation takes place in stainless steel containers. After fermentation is complete, the wine is aged on the lees in the same containers for several months.¶This wine has the historical Soave bottle shape, which was popular at the end of the 19th century, when the Cantina di Soave winery was founded.
