The Kvareli microzone is distinguished by the presence of a high content of black shale in the soil, which makes it possible to achieve the best balance in the wine. Harvesting is carried out manually (only healthy bunches), during the phenolic ripeness of the grapes in late September - early October. The yield is about 8 tons per hectare. After pressing, the wort undergoes traditional fermentation. Next, the wine is left in contact with the pulp for 3 weeks for maximum extraction of aromatic substances. The wine is aged in oak for 1 year.
