Interesting Facts
Favorable climatic conditions, coupled with the carbonate soils of Kakheti and low yields allow the grapes to accumulate more sugar, producing some of the best semi-sweet wines in the country. Harvesting is done strictly by hand (only healthy bunches), during the full phenolic ripeness of the grapes in late September - early October. At the winery, the grapes are destemmed and pressed. This is followed by fermentation. When the optimal alcohol level is reached, fermentation is stopped by lowering the temperature. The wine has an excellent balance of acidity and sweetness and is perfect for both rich meat and cheese dishes and berry desserts.
