Interesting Facts
The best bunches of the Saperavi variety are picked by hand at dawn in late September and early October. The yield is 8 tons per hectare. After destemming, the grapes are peeled and pressed, followed by controlled fermentation. Machari (new wine) is cooled to -2°C to stop fermentation at the required sugar level.
