Contrada (analogue of the French "cru") Cavaliere is located on the southwestern part of Mount Etna, at an altitude of 950 meters above sea level. The vines here reach an age of 50 years. The fermentation of the wine takes place in steel, where the wine is aged for 12 months on fine lees before bottling. The wine is aged in the bottle for another six months in the estate's cellar.
