Interesting Facts

The wine is produced from grapes grown in several vineyards in the Western Cape, where the soils (predominantly clay-shale and quartz-sandstone) and cool conditions are conducive to producing the perfect Pinot Noir. The blend also includes grapes from a small organic plot in the Bottelary Hills, on decomposed granite soil. Fermentation is carried out using wild yeasts (40-60% of the whole bunches). The extraction process is carried out very carefully, using a combination of pumping and stirring, and maceration lasts 30-45 days. The wine is aged for nine months in a mixture of old small French oak barrels.
