Interesting Facts
Rkatsiteli is grown in the Kindzmarauli Corporation’s own vineyards, which are located in the Kvareli and Kindzmarauli zones. Traditionally, the wines produced in this region are of higher quality thanks to the “Kavkasioni” category. Healthy bunches are selectively picked by hand in early October. The yield is about 8 thousand kg per hectare. After destemming, the grapes are crushed, after which the must is taken by gravity. These fractions are then used to prepare Rkatsiteli, which constitutes less than 55% of the total wort. After processing and cleaning the wort, alcoholic fermentation occurs at a temperature of 17-19°C under strict control.
