Interesting Facts
The wine is made from a blend of seven varieties collected from the Podere Serra all'Olio vineyard. Fermentation of each variety takes place separately in concrete and oak containers of various volumes (from 10 to 80 hectoliters). After malolactic fermentation, the wine is aged in new barrels (about 30%) and second and third fill barriques from 11 months for more delicate grape varieties such as Alicante, to 20 months for stronger varieties such as Petit Verdot and Cabernet Sauvignon. The wine matures for another 6 months in concrete tanks before bottling.
