Interesting Facts
Savage White is made from grapes grown on three sites with sandy and granite soils. The elevation of the sites ranges from 213 to 677 meters above sea level. After harvesting and overnight cooling, all berries are pressed. The juice is poured into 500 liter barrels (20% new) and concrete eggs, where spontaneous fermentation and aging takes place. The wine is aged for 12 months in oak and concrete, then another 2-3 months in stainless steel and finally bottled.
