Sauvignon Blanc is harvested early in the morning when the grapes reach optimum ripeness and transported to the winery where it is destemmed and crushed. Maceration can last from 2 to 12 hours depending on the acidity level. After pressing, the juice is transferred to stainless steel tanks for fermentation at low temperatures, which ensures the richness of the aroma. After fermentation, the wine is kept on the lees for a short time to preserve the freshness and purity of the aroma.
