Interesting Facts
Sauvignon Blanc grapes are collected from Central Valley vineyards in 350-pound boxes, immediately delivered to the winery, destemmed and cold macerated for 8 hours, then pressed in a pneumatic press. All vinification processes take place in stainless steel vats. Wine fermentation lasts about 18 days at a temperature of 17° to 19°C.
