Chianti Classico DOCG, Castello di Volpaia
Interesting Facts
The label of this wine is decorated with an image of a church located in the center of the village of Volpaia, inside the fortress walls. This is one of the important architectural landmarks - the Church of St. Euphrosyne, built by Michelozzo di Batrolommeo, a famous Renaissance architect. Now in its cellars there are part of the barrels used for aging Chianti Classico, and in the main part wine dinners and tastings are organized. The grapes for wine are harvested by hand. The grapes undergo destemming and fermentation takes place in stainless steel containers under temperature control. After the end of malolactic fermentation, in late January - early February, the wine is pumped into large Slavonian oak barrels (Botti Grandi) for aging for 14 months.
