Manual harvesting, complete destemming, fermentation in stainless steel containers under controlled temperatures. After the end of alcoholic fermentation and malolactic fermentation, in late January - early February, the wine is sent to age for 24 months. Some of the wine is aged in large Slavonian oak barrels, and some in French barriques. The Chianti Classico Riserva label features the coat of arms of the Volpaia family. This is an illustrious family that took its surname from the name of the village. Chianti Classico Riserva has repeatedly received high awards from both Italian and international wine critics. In 2018 it took 3rd place in the TOP-100 Wine spectator!
