Cabernet Sauvignon Fuerza de Tierra, Undurraga, Central Valley DO
Interesting Facts
The Cabernet Sauvignon grapes are harvested from the estate's vineyards in the Central Valley. The soils are of sedimentary origin and offer good drainage. The climate is humid Mediterranean, characterized by moderately rainy winters, warm dry summers, and cool nights. These conditions foster healthy grapes, yielding wines with a refined texture and expressive aromatics. The grapes were harvested into 350 kg bins. After destemming, the berries underwent gentle crushing. Fermentation took place in stainless steel tanks at 28–30°C over a period of seven days. The wine then remained in contact with the skins for an additional five days to ensure the desired fullness of flavor and optimal extraction of aromatic compounds.
