Interesting Facts
The average age of the Verdejo vines is 25 years. Fermentation lasts 3 months in stainless steel tanks. Throughout the fermentation stage, the must is stirred regularly. Winemakers also monitor the temperature, which should not exceed 15 °C. After 21 days, the must is subjected to cold maceration at a temperature of 6 °C for 12 hours.
