Interesting Facts
The Sauvignon Blanc grapes are harvested from the estate's vineyards in the Central Valley. The soils here are alluvial and well-drained. The climate is Mediterranean and moderately humid, characterized by mild winters and dry summers with moderately warm days and cool nights. These conditions foster healthy grapes and allow the berries to ripen gradually. Before pressing, the grapes undergo an eight-hour cold maceration. Fermentation takes place in stainless steel tanks over a period of 18 to 22 days, followed by a brief period of aging in steel.
