Interesting Facts
The name of the wine is a combination of the names of the farm owner, Piero Rossi Cairo, and his recently born son, Leo. The grapes are hand-harvested around mid-September, and the stems are carefully removed after careful selection. After delicate pressing, the must is decanted and transferred to stainless steel tanks. Alcoholic fermentation lasts 15-20 days and takes place at a controlled temperature of 18°C. The wine is aged with natural yeasts for approximately 3-4 months. The wine is then cold stabilized before being bottled in March.
