The palate is nervy, with a complex bouquet of green pepper and wild red fruits (blackcurrant, cherry, raspberry) in youth; with age the aroma becomes jammy. Fine tannins; the finish is red stone fruit aromas enhanced by undergrowth and spice.

Aromas of wild red fruits, dried flowers, undergrowth, cherry, green pepper, oak and graphite.
Gastronomy:
Lamb, roast poultry or fish, pasta, soft cheeses, Indian cuisine.
Interesting Facts
The grapes are harvested from old vines, aged between 38 and 60 years, on limestone soil on the surface with marl deep below. 95% of the bunches are de-stemmed before pressing. Maceration (approximately 10 days) and two fermentations (classic and MLF) take place in stainless steel vats. Depending on the structure of each vintage, aging is divided between large vats and small 400-liter barrels. The total aging time is at least 3 years.
