Cascina degli Ulivi, "Nibio" - wine made from Dolcetto grapes, which are grown in the vineyards of the Piedmont region. The vineyard and cellar follow organic practices with minimal interference with the natural process. The harvest is harvested when the berries reach optimal ripeness by hand in mid-October in small 20-kilogram boxes. The must is obtained by soft pressing of grapes. Maceration lasts 4 weeks. Alcoholic fermentation takes place at a strictly controlled temperature with regular pumping of the wort at least 2 times a day. After completion of malolactic fermentation, the wine is aged on the lees in large oak barrels of 25 and 50 hl with the addition of selected yeast for 24 months.
