Organic and minimal intervention wine produced from single, north facing vineyard at 715 meters altitude, located in the village of Ano Diakopto. Cultivated in cool climate and clay-rocky soils, providing low yield of high-quality grapes. Spontaneous alcoholic fermentation with wild yeast in stainless steel tanks. Classical white vinification, use only of the free run must, followed by spontaneous malolactic fermentation. Bottled unfined and unfiltered with low addition of sulfites
