Interesting Facts
The Kisi grape variety is harvested manually (only healthy bunches), during the phenolic ripeness of the grapes, in the last week of October. The grapes separated from the ridges are crushed, after which the gravity fraction of the must is separated, the amount of which is 55% less than the total amount of must. After processing and infusing the wort, alcoholic fermentation begins, which takes place at a temperature of 17-19 0C under strict control.
