Interesting Facts
Cannonau grapes are hand-harvested in late September in the Ogliastra region. The vineyards, with 20-year-old vines, are trained using the Guyot system. The grapes are collected in small crates and immediately transported to the winery. Maceration lasts approximately 14 days with constant pumping. Fermentation takes place in steel at a temperature of 22-28°C. After malolactic fermentation, the wine is aged in steel for six months (two of which are spent with regular bâtonnage).
