Interesting Facts

The harvest is collected when the berries reach optimum ripeness. At the winery, the grapes are destemmed and macerated for 7 to 12 days, depending on the tannin structure. Fermentation takes place in steel vats at a controlled temperature, with regular pumping of the must at least 3-4 times a day. This is followed by soft pressing and malolactic fermentation. The wine is aged in 225-liter barrels of varying ages for 18 months. Before bottling, the wine undergoes light filtration.
