Interesting Facts
The wine is made from the Bical grape variety, grown on limestone-clay soil. The vineyard is located on the slight eastern slope of Ois do Bairro, in the heart of the white grape region, first mapped in 1866 by the wine scholar Antonio Augusto Aguiar. In this vineyard, the first harvest for sparkling wines takes place between mid- and late August to achieve higher acidity in the berries. The second harvest for still wines takes place two weeks later. The juice, obtained by soft pressing, is poured into open containers and left in the cold. Fermentation then begins in new Allé oak barrels for two weeks. The wine is aged in these same barrels for 12 months before bottling.
