Ripasso is a classic production method for the region, when the cake left over after fermentation of the great Amarone wine is added during the fermentation process to the Valpolicella wine, thus fermentation begins again. Ripasso wines acquire the depth, complexity and richness of their "big brother" while remaining incredibly elegant and drinkable.
