Dark intense ruby red in colour.
Taste:
The plate is sweet, luscious and rounded balanced by velvety tannins.
Aroma:
On the nose it shows black fruit and berry notes, with hints of wild herbs and spice.
Gastronomy:
A meditation wine for lingering at the end of a meal. Lovely too with cheese, especially gorgonzola; and a good par- tner for chocolatey desserts. Try it too in the traditional manner with the local “sbrisolona” biscuit (a variation on “Shortbread”).
Interesting Facts
To produce Rechoto, the grapes are dried on wooden mats for 100 days after harvest. Afterwards, the grapes are carefully pressed and the must ferments until the desired balance of alcoholic strength and sweetness is achieved. The young wine is then aged in small oak barrels for a year.
