Interesting Facts
The Elgin Valley, where the estate is located, experiences significant daily temperature fluctuations due to its altitude and proximity to the cold Atlantic Ocean. During the harvest, nights were cool and days were moderate. The grapes were whole-cluster pressed, the juice left to settle overnight, and then transferred to French oak barrels for fermentation (50% new, 25% second-use, and 25% third-use). Bâtonnage was periodically performed to maintain freshness. The wine was aged on its lees for a total of nine months. After tastings and rigorous sampling, the final blend was collected from the finest barrels, stabilized, and prepared for bottling.
