Fouassier is one of 10 wineries located in the village of Sancerre, the heart of AOC Sancerre. One of the oldest farms in the region, traces its history back to 1742. The farm owns 59 hectares of vineyards. Fouassier was the first in Sancerre to produce wines from individual vineyards, focusing on the terroir characteristics of each site.

Bourges is a chalky terroir with few stones. There is a limestone layer under a shallow soil layer. This terroir produces light and fruity wines.
Buzancais is a rockier terroir. Formed from limestone and clay marls of varying thickness. The wines from this terroir are exclusively mineral and have great aging potential.
Saint Doulchard - Cimmeridgian marl soils are more clayey than stony, poorly permeable to moisture. Clay layers are separated in certain places by limestone strata. These wines have the greatest potential for further aging.
Flint pebbles with clay are the youngest geological formation, very often found in the vicinity of the village of Sancerre. The ease with which these soils accumulate heat helps the grapes ripen more quickly. The wines of this terroir have a serious character and significant minerality, while they are more open at a young age.
In 2011, Domaine Fuassier received a certificate of organic winery, and since 2012. passed biodynamic certification, becoming the third certified biodynamist in Sancerre.
Since the 80s, Fuassier has been vinified separately for each site, respectively, each Sancerre bears the name of the vineyard from which it comes. The Sancerre range of white wines consists of 11 samples. In addition, the farm produces 4 red wines and 1 rose from Pinot Noir, as well as orange, pet-nat and "natural wine" without the addition of sulfites.
