Juan Antonio Ponce founded the Bodegas Ponce winery back in 2005 at the age of 23. The farm is located in the Manchuela region, little known outside of Spain, located near Valencia, at an altitude of 700 meters above sea level. The hallmark of the region is the Bobal variety. The variety has a thick skin and gives rise to perfectly balanced wines with excellent acidity.
Following current trends in the vineyards, Juan takes a natural approach to creating his wines without clarification or filtration, with a minimum amount of sulfites. The grapes are harvested exclusively by hand, cooled, and then fermented in whole bunches with stems, in order to maximize the preservation of natural fruit aroma, extract tannins and give rich color to future wines.
