Darling

Darling Cellars is a cooperative type company founded in 1948 by merging the assets of 20 farmers to create a single company to represent their wines and interests. Prior to this merger, each farmer produced wine on their land and, in most cases, for personal consumption. Farmers of the cooperative planted their vines in the format of small bushes, so-called "bushvines", and today it has become one of the symbols of the Darling region.
As in the mass segment of wines from South Africa, the dominant varieties were Chenin Blanc and Senso, and only in the early 80-ies it was decided to plant more noble vineyards with varieties Cabernet Sauvignon, Merlot, Shiraz, Chardonnay and Sauvignon Blanc. Only after the abandonment of the production of "beam", Darling Cellars got its real name, which happened in 1997. Serious cash injections into new equipment, the purchase of the advanced bottling line, the rejection of cheap varieties and focusing on the production of Sauvignon Blanc and Shiraz world-class. Today, the company owns 1400 hectares, 95% of which are wild Bush vines that do not require any irrigation, because such vines are already well adapted to the local climate and they are much easier to tolerate the heat. In more rainy years, this vine gives more bunches, in dry less, but in General, the yield of the Bush vine is much lower, which allows you to get a more concentrated taste and abundant aromatics in wines. Only manual labor is applicable to such vines, whose age reaches 60 years. The most successful wines are produced from a variety of Rhone varieties, such as Shiraz, Senso, murvedre, Grenache and Viognier, because all these varieties like dry weather, and from year to year Darling Cellars try to create the optimal Rhone blend. Excellent wines are obtained from Sauvignon Blanc, taking into account its vegetable style and restrained taste, they remind us more of the wines of the Old World. Experiments with Bordeaux varieties like Cabernet Sauvignon, Merlot, Petit Verdot, Malbec and Cabernet Fran do not stop. Special respect is for the Pinotage variety, which is successful both in a blend and in pure form. 40-year-old vines give the perfect balance between the freshness of Pinot Noir and spice varieties Senso. Winemakers apply to the cultivation of each grape variety its individual approach, aging in certain types of barrels, for example for Shiraz oak is used from Burgundy, and for Pinotage they like to use a mix of barrels from France, Hungary and the United States.
